LEMON PARMESAN LINGUINE
  • linguine pasta 1lb.
  • boiling water 16 cups
  • salt 2 tsp.
  • garlic clove, crushed 1
  • hard margarine 1/3 cup
  • LEMON ZESTO 1 tsp.
  • lemon juice (bottled is fine) 1/4 cup
  • salt 1/2 tsp.
  • freshly ground pepper 1 tsp.
  • chopped fresh sweet basil 1/3 cup
  • freshly grated parmesan cheese 1/2 cup
  • green onions, sliced 6
  • freshly grated parmesan cheese, sprinkle

Cook pasta in boiling water and salt in large uncovered pot or dutch oven for 10 to 12 minutes, stirring occasionally, until tender but firm. Drain well.  Sauté garlic in margarine in large saucepan on low for 1 minute.  Add next 4 ingredients. Simmer for 1 minute until hot. Add pasta. Toss  to coat.  Add next 3 ingredients to pasta mixture. Toss. Heat for 2 to 3 minutes on low to heat through. Turn into large bowl.  Sprinkle with second amount of parmesan cheese. Serves 8.
