ORANGE and ALMOND SQUARES
  • hard margarine 1/2 cup
  • fine (berry sugar) 1/4 cup
  • all-purpose flour 1 cup
  • hard margarine 1/3 cup
  • fine (berry) sugar 1/3 cup
  • ORANGE ZESTO 1 tsp.
  • large eggs 2
  • ground almonds 1 1/2 cups
  • sliced almonds 1/2 cup
  • apricot jam, warmed and sieved 1/4 cup

CRUST: Cream first amounts of margarine and sugar together in small bowl until light and fluffy. Stir in flour in 2 batches. Spread evenly in greased foil-lined 9 x 13 inch pan.

Cream second amounts of margarine, sugar and ORANGE ZESTO in small bowl until just combined. Add eggs. Stir in ground almonds. Press onto crust.

Sprinkle with sliced almonds. Bake in 350 degree oven for about 25 minutes.  Wooden pick inserted in centre should come out clean.

Brush with jam. Let cool in pan before cutting. Cuts into 48 squares.
