Sole with Lemon Dill Sauce
- garlic clove crushed 1
- hard margarine (or butter) 1 tbsp.
- Lemon Dill Sauce
- LEMON ZESTO 1 tsp.
- whipping cream 1 cup
- chopped fresh dill 1 tbsp.
- salt 1/4 tsp.
- pepper sprinkle
- sole fillets 1 1/2 lbs.
METHOD:
Sauté garlic in margarine in medium saucepan on medium-low for 1
minute.
Lemon Dill Sauce: Add next 5 ingredients. Stir. Simmer, uncovered, for
about 12 minutes until slightly thickened. Makes 1 cup (250 mL) sauce.
Roll up sole, starting from small end. Bring 1 inch (2.5 cm) water to a
simmer in non stick frying pan. Add sole. Poach for 6 to 8 minutes,
turning over once, until sole flakes easily when tested with a fork. Serve
sauce over sole. Serves 4
