Guilt-free Caesar Salad

  • 4 garlic cloves
  • 2 tbsp olive oil
  • 2 tbsp chicken broth or water
  • 2 tsp lemon juice (bottled is fine)
  • 1/4 tsp anchovy paste
  • 1/2 tsp Lemon Zesto
  • dash each worcestershire & tabasco sauce
  • 2 tbsp parmesan cheese
  • salt & freshly ground pepper
  • 3 sun-dried tomatoes (optional)
  • 3 cups torn washed romaine lettuce
  • croutons

METHOD:
Place garlic in a 1-cup measuring cup or small bowl.  Using a fork, mash garlic into a pulp.  Whisk in oil, broth, lemon juice, Lemon Zesto, anchovy paste, worcestershire & tabasco sauce and cheese.  Then taste and add up to 1/4 tsp each of salt and pepper.
If using tomatoes, drain well and blot with paper towels to remove any excess oil, then finely chop.  In a large bowl, toss lettuce with dressing.  Sprinkle with tomatoes and croutons.  Serve with extra parmesan to be added at the table.
