A drop or two of almond extract could be added to boost the rich ripeness of the fruit. Serve this with ice cream or vanilla yogurt.
Cream 4 tbsp. sugar with
margarine until light. Blend in egg. Combine flour, baking powder and ZESTO. Add
alternately with milk to batter, starting and ending with dry ingredients. Pour into a
greased & floured 8 - inch cake pan or 9 - inch springform pan. Arrange peaches skin
side up evenly over surface. Sprinkle with almonds and remaining sugar. ORANGE DATE CHOCOLATE CHIP COOKIESProcess sugar, dates, nuts, oatmeal and ZESTO in food processor until quite fine, add margarine, vanilla and egg, process until creamy. Add flour, baking soda and salt, pulse on and off until well mixed; pulse in chocolate chips just so that they are blended in and not chopped fine. Drop by spoonfuls on to ungreased baking sheet, bake in preheated 350° - 375° oven for 10 -12 minutes depending on how hot the oven gets. Cool on rack, enjoy.
