TURKEY CASSEROLE WITH BROCCOLI
  • 2 Cups Noodles
  • 1 Pkg. Frozen Broccoli
  • 2 Cups Cooked Turkey
  • 1/4 Cup Slivered Almonds

FOR WHITE SAUCE:

  • 2 Tbsps. Butter
  • 2 Tbsps. Flour
  • 1 Tsp. Salt
  • 1/4 Tsp. LEMON ZESTO
  • 1/4 Tsp. Pepper
  • 2 Cups Milk
  • 1 Cup Grated Cheddar Cheese

Heat oven to 350º. Cook noodles, then broccoli. Make white sauce; when thick stir in cheese. Dice broccoli stems leaving flowers for top. Put noodles, broccoli stems, turkey and almonds in casserole. Cover with sauce. Arrange broccoli flowers on top and bake for 15 to 20 minutes.

CHINESE EGG SWIRL SOUP

  • 6 Cups Turkey Stock
  • 3/4 Cup Green Onion
  • 1/2 Cup Mushrooms sliced
  • 3/4 Cup Cooked Turkey, finely shredded
  • 1/4 Tsp. LEMON ZESTO

Simmer in a large cover saucepan for 10-15 minutes.

  • 1 Egg
  • dash Salt
  • dash Pepper

Beat in a cup. Pour steadily into boiling soup. Stir soup constantly so the egg shreds.

  • 1 Tsp. Soya Sauce

Add and stir

Weight loss tip for January 1998.
Like most people I don't like the taste of artificial sweeteners etc. So I mix half and half ie: half Splenda and half real sugar. You'll never know the difference.
