PINEAPPLE LOAF

Moist and Marvelous!
Best of Bridge

  • 1/4 cup butter
  • 3/4 cup brown sugar
  • 1 egg
  • 1/3 cup orange juice
  • 1/4 tbsp. ORANGE ZESTO
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup crushed pineapple with juice
  • 1/2 cup chopped pecans
  • Cream butter, sugar and egg. Add orange juice and ORANGE ZESTO and mix well. Sift flour, baking soda, and salt. Add to creamed mixture and then stir in pineapple and pecans. Pour into a greased 9" x 5" (2L) loaf pan. Let stand while oven heats to 350 degrees F. (180 degrees C.). Bake for 45 minutes.

    Spiked Apple Betty

  • 5 cups peeled and sliced apples
  • 1/2 tsp. cinnamon sugar
  • 1/4 tsp. LEMON ZESTO
  • 1/4 tsp. ORANGE ZESTO
  • 2 tbsp. Grand Marnier
  • 2 tbsp. Amaretto
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 3/4 cup flour
  • 1/4 tsp. salt
  • 1/2 cup butter or margarine
  • Slice apples into greased 2 quart (2L) casserole. Sprinkle sugar, LEMON & ORANGE ZESTO and liqueurs on top of apples. In another bowl, mix remaining ingredients with a pastry blender until crumbly. Pat mixture over apples. Bake, uncovered, at 350 degrees F. (180 degrees C.) until top is slightly browned, approximately one hour.
    Serve warm with cream, whipped cream, or with vanilla or cinnamon ice cream.

    Orange Soufflé

  • 2 envelopes unflavored gelatin (1 tbsp. each)
  • 2 cups sugar
  • dash of salt
  • 4 egg yolks
  • 2 1/2 cups of orange juice
  • 1/4 tsp. ORANGE ZESTO
  • 1/4 tsp. LEMON ZESTO
  • 3 tbsp. lemon juice
  • 1 cup orange sections, cut in half
  • 2 cups whipping cream, whipped
  • Chicken Salad

  • 1 cup mayonnaise
  • dash of white vinegar
  • 1/2 cup whipping cream, whipped
  • salt and pepper to taste
  • 3 cups white meat of cooked chicken or turkey, diced.
  • 1/2 cup celery, diced
  • 1/2 cup almonds, toasted
  • To make the orange soufflé, mix the gelatin, sugar and salt in pan. Beat together egg yolks and 1 cup (250 mL) of orange juice. Stir into gelatin mixture. Cook over medium heat and stir in ORANGE and LEMON ZESTO and remaining juices. Chill, stirring occasionally, until the mixture mounds when dropped from a spoon. Stir in orange sections. Fold in whipped cream. Pour into a 2 quart (2 L) ring mold. Chill until set.
    To make the chicken salad, combine mayonnaise and vinegar. Fold in whipped cream, salt and pepper. Add diced chicken and celery.
    To serve, unmold soufflé onto a glass plate and mound of chicken in centre. Garnish with almonds.
    Serves 8

    ARLENE'S HINT FOR MAY

    To clean a stained aluminum pot "automatically", try cooking tomato sauce in it. The acid brings back the aluminum shine and gets rid of most dark stains. If you have no plans to cook with tomato sauce, you can also clean aluminum pots by adding two tablespoons of white vinegar to boiling water.
