Orange Honey Bread

Best of Bridge

  • 2 tbsps. shortening
  • 1 cup honey
  • 1 egg, well beaten
  • 3/4 tsps. ORANGE ZESTO
  • 2 1/2 cups flour
  • 2 1/2 tsps. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup orange juice
  • 3/4 cup chopped nuts
  • Cream shortening and honey. Add egg and ORANGE ZESTO. Sift flour with baking flour, baking soda and salt. Add to honey mixture alternately with juice. Add nuts. Put in greased 9" x 5" loaf pan and bake 1 hour and 10 minutes at 325 degrees.

  • 1 10oz. can drained mandarin orange sections
  • 4 tbsps. butter
  • 4 tbsps. "Chicken in a Mug"
  • 1 cup hot water
  • 1 cup orange juice (made from unsweetened frozen concentrate)
  • 1 dash of tabasco
  • 3/4 cup creamed honey
  • 1/2 tsp. ORANGE ZESTO
  • Melt butter in a saucepan, add flour and stir until bubbly. Mix "Chicken in a Mug", hot water, orange juice and ORANGE ZESTO. Add to butter mixture. Stir until thickened. Add honey and tabasco. Keep stirring and add orange sections. Beat until fairly smooth and serve hot with duck.

    Avgolemono Soup

  • 6 cups chicken or turkey broth
  • 1/4 cup long grained rice
  • 1 tsp. salt
  • 3 eggs
  • 1/4 cup lemon juice
  • 1/2 tsp. LEMON ZESTO
  • Combine broth, rice, salt and LEMON ZESTO in large pot and bring to boil. Cover and simmer until rice is tender (about 25 minutes). Cool only slightly. Beat the eggs in a bowl until thick, then beat in lemon juice. Carefully stir 2 cups of broth into egg mixture and beat well. Return to soup pot and beat until slightly thickened. Cool and refrigerate. Soup will thicken as it becomes well chilled. Stir before serving.

    ARLENE'S HINT FOR APRIL

    Sour cream substitute: The texture and flavor is not exactly the same, but if you need a substitute for sour cream in a pinch, combine six ounces of cottage cheese with one teaspoon of lemon juice in a food processor or blender until it is smooth.
