Super Blueberry-Lemon Muffins

Best of Bridge
These will disappear as quickly as you make them!

  • 2 cups flour
  • 1/2 cup sugar
  • 3 tsps. baking powder
  • 1/2 tsp. salt
  • 1 tsp. LEMON ZESTO
  • 1 egg
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 cup fresh, frozen or canned blueberries
  • Topping

  • 1/2 cup melted butter
  • 1 tbsp. lemon juice
  • 1/2 cup white sugar
  • Mix flour, sugar, baking powder, salt and LEMON ZESTO in large bowl. Beat egg in medium sized bowl, add milk and butter. Add egg mixture to dry ingredients. Stir until just mixed (batter will be lumpy). Stir in blueberries. Fill muffin pans 2/3 full and bake at 425 degrees for 20 minutes.

    Sweet Potatoes in Orange Sauce

    FOR NON-BELIEVERS

  • 4 lbs. sweet potatoes
  • 1 1/4 cups sugar
  • 2 tbsps. cornstarch
  • 1 tsp. salt
  • 2 cups orange juice
  • 4 tbsps. butter
  • 3/4 tsps. ORANGE ZESTO
  • 1 orange thinly sliced
  • Peel potatoes and cut into 1/2" (1 cm) slices. Overlapping slices, arrange in rows in a shallow 3 quart (3L) baking dish. Set aside. In a small pan combine sugar, cornstarch and salt. Stir in orange juice until well blended. Bring mixture to a boil and cook, stirring constantly until thick and clear, about 1 minute. Remove from heat and add butter and ORANGE ZESTO. Pour over sweet potatoes. At this point you may cover and set aside until ready to bake. Bake at 400 degrees F. (200 degrees C) for 45 to 50 minutes. Uncover and baste thoroughly with sauce. Bake uncovered 15 to 20 minutes more or until tender and well glazed. Arrange orange slices over top to serve.

    Serves 10 to 12

    French Lemon Pie

  • 4 eggs
  • 1 cup light corn syrup
  • 1/2 tsp. LEMON ZESTO
  • 1/3 cup lemon juice
  • 2 tbsps. melted butter
  • 1/2 cup sugar
  • 2 tbsps. flour
  • 1 unbaked 9" pie shell
  • 1/2 cup whipping cream
  • In a medium bowl, beat eggs well; add corn syrup, LEMON ZESTO, lemon juice and melted butter. Combine sugar and flour, then stir into egg mixture. Pour into unbaked pastry shell and bake at 350 degrees F. for 50 minutes. Chill. To serve whip cream and mound onto pie.

    Arlene's Hint for March

    If your microwave oven needs a serious cleaning, put two tablespoons of either lemon juice or baking soda in a cup of water in a microwave-safe four-cup bowl. Let the mixture boil in the microwave for about five minutes so that steam condenses on the inside walls of the oven. Then wipe off the walls, inside of the door, and the door seals.
